Split Pea Soup, PlantPure Nation cookbook

The Split Pea Soup recipe in the PlantPure Nation Cookbook is simple to prepare and very flavorful. If made on the stovetop, it will require stirring about every 15 minutes during the two hours of simmering so that it doesn't stick to the bottom. I did this without complaining because I was working around the house anyway. Actually, I enjoyed watching the soup develop.

I used Spike Veg-It, 3 TBSP with the 8 cups of water, and it intensified the flavor very nicely.

The soup was tasty enough that I plan to make it again. I recommend this recipe!

    I love split pea soups in general. All I have on hand though are yellow split peas and frankly the color isn't as exciting to me as the green. Not that that stops me from making soup with them.
