WLS recipe - Mini Fritattas

Since having WLS, portion controlled recipes, like those made in muffin tins, have been life savers!
I love making little egg bites, loosely based on the great recipes I've found on The World According to Egg Face - Check it out!
1 1/4c Egg Beaters
1 c. Sauteed, chopped peppers and onions and/or mushrooms
or finely diced ham (or other leftover meat?)
Red pepper flakes (optional)
Salt & pepper (optional)
Spray mini muffin tin
Bake at 350, 20 min, 'til golden on top.
Here I topped with some shredded cheese:
These freeze well, too!
