The first thing that I "cooked" after WLS was baked ricotta.
Lasagna has got to be my favorite food, so when this was a suggestion of something easy to eat, I was quite pleased.
It was just some part skim ricotta, topped with a little smooth tomato sauce and topped with shredded mozzarella, and baked in the smallest ramekin I could find, until the cheese on top melted. Yum!
I could only eat half of it in the early days, but that was okay. It was so nice to have something other than a protein shake!
