Legumes: So Good and Finally, Too Easy!

Over the years, I've battled with the idea of cooking any kind of legumes from scratch, and mostly lost. Even when the recipe was "fool proof", it still wasn't. Today, I tried something different and it was just too easy. I must be dreaming! LOL I made a mix of about half and half split peas/lentils and then mixed that with an equal amount of brown rice. I cooked it as if I was just cooking brown rice. It turned out perfectly! I also put in some cabbage, onion, and garlic while it cooked, and once it's cooled, it will be made into a 'bean' and rice salad. I love bean salad, but it can be too gassy, too. The mix of rice will certainly help!

btw, real fool proof brown rice: 2 1/4 c water, 1 c brown rice, bring to boil and then turn stove down to "2" and simmer for 35 minutes. add seasonings at the beginning and/or add butter at the end, if desired. If you want to add any veggies, do so according on the variety and how well you want them done. :)
