It's no secret that my new favorite grain is quinoa (see my recipe for Cranberry Quinoa Muffins teressamorris.com/2015/1 1/12/cranberry-quinoa-muff ins/ ). It's high in protein, fiber AND iron. Plus, it's gluten free. What's not to love? I'm always on the lookout for new quinoa ideas, since we mostly eat it steamed, like rice.
Recently I bought a big bag of kale so I could make my Tasty Kale Chips teressamorris.com/2013/1 1/12/tasty-kale-chips-recipe/ . Unfortunately, I was too busy that week to babysit roasting kale (believe me, you don't ever want to smell BURNT kale). So the bag just sat in the refrigerator.
I am trying a new recipe this week for Salmon cakes made with quinoa. I have already cooked the quinoa, just need to put everything together and fry the cakes. The muffins look very good. 994 days ago
I made a vegetable soup and put kale in it. IMy husband commented that my soup looked and smelled good, so I thought that perhaps he would actually try it this time. I knew that the kale would throw him so the first bowl of soup i ate, I ate mostly kale. It was good. I don't know too much about quinoa, but I know that it is good for you. I may check out your recipes..Green eggs and spam?? Oops! Green, Eggs, and spam. I read it without the comma but now I understand. LOL 994 days ago
