National Cheese Lover's Day

Wednesday, January 20, 2016

Today is National Cheese Lover’s Day. The average American consumes about 31 pounds of cheese each year. That may seem like a lot, but for the average French person it’s 50 pounds!

There are about 2,000 known cheeses in the world, and they can all be classified by texture. Here are the primary classifications and some examples: fresh cheese (ricotta); soft cheese (feta); semi-soft cheese (Fontina); semi-hard cheese (Gouda); hard cheese (Cheddar); double or triple crème cheese (Brillat-Savarin); blue cheese (Gorgonzola); washed rind cheese (Limburger); and bloomy rind cheese (Brie).

People have been making cheese for at least 8,000 years, so the cheeses we enjoy today are all relatively young by comparison. Take Emmental (also known as Swiss cheese), for example. It’s only been around since the first century BC.

Normally, we know few if any of the cheese facts associated with the particular type of cheese we happen to be eating. All we know is that it either tastes good, or we'll try something different next time.

We associate:

Cheese with holes with the Swiss
Brie with the French
Limburger with the Dutch - the French make it as well
Cheddar with the USA

Some countries produce only one or two cheese types, others like France and Italy, produce a substantial number of different cheeses.
The most popular cheese recipe is the United States is "macaroni and cheese."

Cheese takes up about 1/10 the volume of the milk it was made from

A giant wheel of Cheddar cheese was given to Queen Victoria (1837-1901) for a wedding gift. It weighed over 1,000 pounds. A normal Cheddar wheel weighs 60-75 pounds.
