Another late, late night.

Oh dear. I am just getting started again and am already facing a challenge. I have trouble sleeping. The past couple days my whole schedule is upside down. This often happens and I deal with it. Well, last night I ended up being incredibly hungry. Probably because I didn't really have my 3 meals because I was busy sleeping. So.... what to do? what to eat?

I made lentils to keep on hand and decided to try a lentil burger. Didn't have what a lot of recipes called for so I improvised. Now I really do like lentils but let me tell you... a lentil burger? Oh. My. Goodness. It was so good. I had it on a plate with some chopped onions, a spoonful of shredded cheddar and some ketchup. Divinity.

I had also cooked spinach and while I was rooting through the cabinets I found a can of zucchini in tomato sauce. Odd to have it. I am much more likely to just make it. So I sautéed some onions, added the zucchini, turmeric, black pepper and about 2 cups of spinach. Heated it through and topped it with a little grated cheese. Again - a hit. Will make that again from scratch.

So I'm pleased with myself. I could have gone for cheese or ice cream but I actually prefer regular food to that. I planned on having turkey burgers this week and may just make it a lentil burger instead. Anyone else like these? Do you have a favorite recipe?
