Tender, fluffy vegan pancakes--YUM!

The pananacakes (made with banana) from The China Study Cookbook are the fluffiest, most tender vegan pancakes I have ever made! Flaxseed meal mixed with water substitutes for egg, and soy milk for milk. Banana makes added oil irrelevant. Delicious! Bet you can't eat just one!
