incredbly tastey salmon pasta for lunch
Saturday, November 14, 2015
With apologies to anyone who isn't interested in food, there's going to be a lot about it for a while as I explore the recipes on the budget eating plan from Jack Monroe. For lunch today Pol and I had salmon pasta. On a budget. I kid you not. Recipe link at the bottom.
I blended the sauce to make it smooth as finely slicing onions is not something my hands manage and we prefer smooth sauces anyway. We didn't add the yogurt, Pol just didn't fancy it, but she did fancy some peas in it and that worked really well. I didn't weigh the pasta, I use a handful for each of us, which is enough for lunchtime although less than I used to cook when we ate cheap wheat pasta. Paying for gluten free pasta has made me reevaluate how much makes a serving which has been good for my waistline! I thought it would not be so creamy without the yogurt but honestly, if someone had put that in front of me in a café I would have happily eaten it and paid well for it. It is also a fairly healthy and quite quick lunch or light dinner (I'd add a big salad or make more pasta for dinner)
I'm not sure if salmon paste is a "British thing" or if it's available elsewhere but it's one of those really cheap foods (30p or less per jar) that you have on sandwiches. Meat or fish based pate would probably work as well but wouldn't be cheap!
