Gluten free bread costs a fortune and is, quite frankly, not very nice. So I figured it was worth trying the soda bread recipe from Jack Monroe with gluten free flour and see if that worked. The answer is that yes, it really does work very well.
I used 2 different flours to see if it was worth buying the more expensive one or if the cheap one would do the trick. The cheap one, Asda's own gluten free plain flour needed a little xanthan gum adding (a scant 1/4tsp, any more and you can taste it) but the expensive Dove Farm organic one had that in already. The results were clear, the Dove Farm loaf was glorious, the Asda one perfectly eddible but not quite as good texture. So Asda for every day bread, Dove Farm for anything a bit special then!
Cost wise, that means that my bread is going to cost about 50p a loaf compared with £1.50 for the bought stuff. A bought loaf will usually last us half a week. That's a huge saving for the sake of half an hour's effort a week to make a few loaves.
