6 Heads of Garlic, Bacon Grease & Spinach, To Go Please

So the spinach has been sitting in the fridge for a week. Not a good way to start bulk cooking. As you can tell, I don't feel like cooking today but the spinach will have to be thrown out if I don't. So here I go, the momentum will carry me over.
I don't know where the time went, but it must have taken 1 1/2 hours to pull it off. 2 lbs of spinach, 6 heads of garlic, bacon grease and I got 12 servings. Ten containers go into the freezer while I keep two in the fridge section. They are not bad taste wise.
Line up the suspects
Cook the garlic all at once then put aside. Use enough bacon grease to cook garlic with (about 3/4 cup to 1 cup)
Cook the spinach in batch
Final outcome looks more like garlic sauce with a few leaves of spinach thrown in
