Things have certainly improved over the past week. Although I still have areas to tweek, I'm feeling better about shifting back into a healthier routine.
I'm pretty confident that gluten is a problem with my gut, and I've been doing some experimenting with gluten free alternatives.
The biggest challenge is pairing flour mixes with appropriate recipes. Today I plan on finding a Spark team that might have some good ideas. Last week I bought a gluten free flour blend and I've so far had some very disappointing results. Today I'm going to try making my own blend and hopefully make something that will pass for an acceptable bread.
I'm not a bread addict, but having an alternative with make my life a whole lot easier.
