Day 10

Things have certainly improved over the past week. Although I still have areas to tweek, I'm feeling better about shifting back into a healthier routine.
I'm pretty confident that gluten is a problem with my gut, and I've been doing some experimenting with gluten free alternatives.
The biggest challenge is pairing flour mixes with appropriate recipes. Today I plan on finding a Spark team that might have some good ideas. Last week I bought a gluten free flour blend and I've so far had some very disappointing results. Today I'm going to try making my own blend and hopefully make something that will pass for an acceptable bread.
I'm not a bread addict, but having an alternative with make my life a whole lot easier.

    I have read Wheat Belly. It's quite a wake up call. I've been studying to be a Health Coach through the Institute for Integrative Nutrition, and they challenge students to try out some of the ways of eating that we learn about. I went without gluten for a week and felt really great. The first day I had gluten back in my diet, I felt foggy and had a horrible headache. So now I am taking gluten out of my meal plans one step at a time. Once I've gone a few weeks without any gluten, I'll see if there's a healthy threshold for my body to handle. It's quite shocking as to where gluten shows up in foods!
    I just made an awesome bread this afternoon that I can happily substitute over the coming week. My meal plans are in place, so I think that I will have a great deal of success.
    Good for you on the 15 pounds lost! If you have any tips or recipes that you are interesting in sharing, I would love to see them.

    I have tried the gluten free, lost 15 pounds, but it's hard to follow if you live with someone who likes their bread. You would be surprised at how much gluten is in other food too. Have you read the Wheat Belly Diet? emoticon
