Recipe Review: Slow Cooker Salsa Chicken (from Sparkpeople Cookbook)

I made my first recipe from the Sparkpeople cookbook tonight, and it's as delicious as everyone says it is. recipes.sparkpeop

I put everything in the crock pot this morning, and hubby and I left the house at the same time. He was off work today, and e-mailed me later on to say that the house smelled so good when he got home that he wanted to eat the chicken then and there!

The house did smell fabulous when I got home, too. Hubby had his chicken in hard taco shells, and I used soft corn tortillas. We both added shredded romaine lettuce and a little bit of Mexican blend cheese.

My one observation is that there was more juice in the bottom of the bowl (and coming out of our tacos) than we anticipated. This wouldn't be a problem if served over rice to absorb the liquid. However, if the recipe is intended for tacos, I would leave out the half-cup of water called for in the recipe. FYI, I used Newman's Own mild salsa, and regular (not petite) diced tomatoes.

And, a note on Chef Meg's taco seasoning recipe - delicious! I'm glad I reduced the red pepper flakes to two teaspoons, though - next time I mix up a batch, I might reduce it a little further (though I have a very low tolerance for spiciness).

After dinner, I set aside a cup of chicken with brown rice for my lunch on Friday, and there's still a large container left in the fridge. This recipe is definitely a hit with us!

    That is an awesome recipe! We tried in soft taco shells, with a smear of refried beans and spanish rice, after trying it at a local burrito shop. To die for!!

    I love the recipes that Chef Meg shares and have saved quite a few, haven't seen this one but sounds so yummy...I love heaps of spice so would likely keep it the same as recipe calls for it... emoticon emoticon for sharing...
