I can't believe its been 2 years!

It has been 2 years since my last blog. I can't believe it has been that long!
In the last 2 years I basically gained back every pound I had lost. I was back up to 210lbs and miserable.
Then about 3 months ago, something changed in me. I can't really put my finger on what but I knew that I was finally ready to commit to changing my diet to promote weight loss. Before this, I only wanted to exercise but didn't want to really think about what I ate. I "tried" to eat healthy by not eating too many calories during the day but would splurge when I got home in the evenings. But finally I was ready. I started the Curves Complete diet and, to my great surprise, it was EASY! It involved a lot of cooking and my grocery bill went up with all the fresh food I was buying but it tasted good and I was always full. The basic plan is eat 1200 calories for 7 days then 1500 calories for at least the next 23 days (rest of the month) or until you stop losing weight. Once you plateau you move into the maintenance part (phase 3). You eat 2000 calories a day and once you gain back 2-3 lbs you eat 1200 calories for 2 days until you lost it again. Then repeat this process until you can maintain your new weight at the 2000 calories a day.
The whole process made sense! And it works. When I started the diet I was around 200lbs. I am now in the maintenance phase sitting around 185. 15lbs gone in a little over a month! Once I'm stable at this new weight I will be repeating the whole diet again and will continue repeating it until my body stops losing weight. It is the best thing I've ever tried!
The downsides: I have been cooking all the time. Which means I get to do dishes all the time :-P. Also, you can get tired of some of the recipes in the book if you eat them all the time (like I do). But I'm getting better at using substitutions in order to make an old recipe new.
What are you doing to lose weight? What diet changes have you made to be successful?
