Mediterranean Stew Moosewood Lowfat Favorites

This recipe is delicious and nutritious. It does require time to chop the vegetables on which the soup depends: bell peppers, asparagus, summer squash, zucchini, onion, garlic, but the result is delicious and the recipe is generous. I doubled the recipe and made a very large soup pot of the stew, so my effort will have us well-fed and happy for days.

The Moosewood Lowfat Favorites cookbook is one of my all-time favorite cookbooks, so it is worth buying or borrowing from the library. However, if you are clever at using Look Inside on Amazon, you will find the recipe there. It is called Mediterranean Stew. Highly recommended!

    It really is a favorite stew of ours. When I double the recipe, I have to chop veggies in several sessions (4 bell peppers, 6 squash, 4 c. asparagus), but when it's done, it's done! and we automatically consume lotsof veggies as we eat it all up over the course of 3-4 days.
