Quinoa Salad with Currants and Pistachios

This quinoa dish is Wow-Zowie! I substituted Goji berries for the currants and added chickpeas, but the original recipe is just as good. The lime juice lends a salty taste to the dish, so no need to add salt, and it is so moist and delicious I wouldn't think of adding oil (there is no added oil in the recipe). Highly recommended!
The other bonus of this recipe is that it makes at least 4 quarts of the scrumptious deliciousness, so you don't have to cook again for several days.
