CSA provides lots of veggies and a challenge for creativity

Picked up this week's CSA share. I did manage to use up all the vegetables from last week except for a half a head of Napa cabbage which I will use this week. Anyway here's what I have for this week and will be looking for lots of new recipes to try. Anyone have favorite recipe for rhubarb or ideas for garlic scrapes.


Yesterday's meal - crab cake, salmon with oyster mushroom wine sauce, and roasted napa cabbage. The roasted napa cabbage even passed my husband test. He said " I don't know what you did to the green stuff, but it was good. "

    I have a couple friends that use a service like this is my area. I wish I could. I think I would have to go it alone as my DH and kids would turn their noses up at all but a few select veggies. You are so fortunate.

    Hope they gave you only the stalks of the rhubarb, the leaves are toxic, so throw them away if you have the leaves. Rhubarb is VERY tangy, so usually needs a fair amount of sweetening to be palatable.

    I was just reading a bit about garlic scapes in "Hero Food" by Seamus Mullen. He's a chef, an "Iron Chef," with RA. I think you can lightly cook them, similarly to scallions. Maybe even use raw if you like the taste.

    garlic scapes are the green tops of the garlic. They cut them off so the garlic bulb can develop more. They have the texture of a green been but with a mild garlic flavor. So glad I found out about them, they are my new favorite veg.

    I'm going to make rhubarb blueberry muffins with the rhubarb, a spark recipe.

    What a lovely group of produce. I have never had rhubarb and don't know what garlic scrapes are. My husband is VERY picky so I can't serve such creative/ exotic meals. No mushrooms, sour cream, cream cheese or unusual looking foods for him. I LOVE veggies and love trying new things. Unfortunately, a lot of produce gets wasted in my house as I can't use them all up before they turn.
