Chef AJ's Disappearing Lasagna

The name alone enticed me to try this recipe. What makes it different from other vegan lasagnas? Several features:

1. You can substitute cannellini beans for the tofu. I plan to try this the second time.
2. There are pine nuts in the tofu "ricotta" mixture.
3. The amount of mushrooms and spinach is more generous than the recipes I've tried in the past.

I couldn't find no-boil rice noodles, so I just cooked regular lasagna noodles prior to assembly, so adjusted the time to 30 min. at 375. It worked fine.

This lasagna is very tasty and is my favorite vegan lasagna recipe so far. Link at bottom.

    I'll have to try this. Good vegan lasagnes do tend to be unsatisfying in general, I'm not sure why.
    I didn't know that they even made no boil rice noodles, have to look for those too!
