Found this just now and I'm headed to the kitchen to try it:

Avocado and Salmon Low-Carb Breakfast
Serves: 1
• 1 ripe organic avocado (about 100 grams or 2.5 oz)
• 2 oz of wild caught smoked salmon
• (1 oz of fresh, soft goat cheese
• 2 tablespoons of organic extra virgin olive oil
• the juice of 1 lemon
• a pinch of sea salt
1. Cut the avocado in two and remove the seed
2. In a small food processor mix the rest of the ingredients until coarsely chopped.
3. Place the resulting cream inside the avocado.
4. Serve immediately.
6. Cut the avocado in small cubes.
7. Cut the salmon in small pieces.
8. Mix the two together.
9. Add the goat cheese and the rest of the ingredients and blend well.

    I use my iron skillets for almost anything but eggs. My griddle is an electric no stick and really use it a lot more than I thought I would to cook for my healthy eating. emoticon

    Do you all use an iron skillet to put in the oven? I don't have one and hesitate to put what I use into the oven?????? Help!

    My favorite breakfast is an omelette. I have a griddle my Mom got me for Christmas a few years ago. I use liquid egg whites and 2% cheese. Sometimes I like to throw in some salsa or a meat. I love Cream of Wheat too. I'm big on the smoothies right now. I love ideas and love avocado's. Smoke salmon is so expensive but would be worth it. Sounds good to me.

    Is this something you eat out of the avocado shell, on toast? I'm not real clear on how this is eaten? But it sounds yummy, do let us know.

    I just finished my breakfast that I saw somewhere can't remember; it too was yummy.

    1 small sliced thickly tomato placed in a circle in a hot sprayed pan. Let it cook a little on a high heat to brown a little, then crack an egg on top and let it cook to your liking (covered) and season to your taste.
    I toasted a whole wheat pita and placed the meal on top of it with a little shredded cheese. A 1/2 of a pink grapefruit balanced it all out for me and now I am ready to get this day in motion.
