I have been participating in a fruit and vegetable co-op. It is wonderful! I love the variety of items I get in my basket, sometimes a challenge or two. However, there often ends up with odds and ends or just too much to use in a week. Especially this week with my husband out of town, I am eating vegetables morning, noon and nighttime too. I am on a soup kick. Last night I made a pot of carrot, sweet potato soup that also used some onions, and zucchini. I found a recipe for a vegan, no fat cream of celery soup that uses potatoes for the creamy part. That's next of the list. /Oh, and by the way, the sweet potato soup was great. I did have to use considerably more seasonings than the recipe called for. Vegetables don't have to taste boring!
