I had a great day.
Breakfast with egg whites, a lunch using Smuckers organic peanut butter and strawberry preserves, but dinner was my best.
I made a casserole:
12 oz Chicken Baked (cut into pieces).
1/2 head Broccoli, cut into pieces and steamed
74g Rice Blend (real rice, NOT the quick cook type)
2 cups (cooked) Pinto Beans (from dried beans)
all mixed together and put into glass bread pan
Covered with Finely shredded sharp cheddar.
Cooked 30 minutes
Because of the bean, the entire process, including soaking and cooking (10 hour soak and 2 hour cook) takes about 12 and 1/2 hours. But it is worth it.
Cover with cold Pace Salsa.
