My biggest obstacle this week is I'm lacking motivation to cook at all. Yesterday I made a slow roasted pork roast. It smelled delicious! My mistake is I went by the recipe and how hot the pork should be. Well, this totally overcooked it so now it is dry. I think I will try re-hydrating it with some chicken stock. Here it goes, this is my plan for the week for meals.
Wed - Pulled pork sandwiches
Thur - whole grain pasta with homemade marinara
Fri - breakfast for dinner
Sat - some type of creation with the leftover pulled pork
Sun - Carne Asada
Monday - Roasted chicken
Tues - Leftovers
My exercise plan has been great. I've been jogging more with the dogs and I am still doing P90X as well as my regular Tiger activities.
