Event Horizon - Healthy Shopping

I am so excited I am in tears. It sounds like such a small thing, but my husband just offered to plan a healthy menu with me before we go shopping.

Don't get me wrong. This man is my rock, my best friend, my hero. His eating habits however.... He loves all the same fattening greasy calorie laden treats that were my downfall in the past. Having them in the house creates such a temptation for me. And he still offers it when he cooks ... "You want just a little piece? You sure? You have to relax and treat yourself now and then". This is not a man trying to sabotage me, he has just had 20 plus years of sharing with me and this is an adjustment.

So today when we were discussing how yummy a fruit salad picture on our Facebook feed looked, we somehow transitioned into shopping and then.. " Why don't you help me plan a healthy menu before we go shopping this week ? ".

Be still my heart; I have fallen in love all over again. emoticon

Any great menu ideas and shopping tips appreciated... emoticon

    Thanks for the input. I have used SparkRecipes and loved it. So many great ideas. I am a complete novice at cooking fish though.... that's an area we need to explore...

    I understand completely. I am married 24 1/2 yrs. and our favorite activities from our 1st date until today include eating unhealthy meals together. Just yesterday, my husband said said, "I'm starving. Please stop at Hardees drive thru so I can get breakfast." He orders 2 bacon egg and cheese biscuits. Asks me several times what I wanted. I refused to get anything (I had already had oatmeal for breakfast). Then while eating he is making yummy sounds, so I asked him to stop as they already looked and smelled delicious. He then kept offering me a biscuit or a bite. I resisted:) As for healthy foods. Just this week I made 2 spark people recipes that my family and I all LOVED. Herb Crusted Salmon and Shrimp Fried Rice. Just check the spark people recipes. My husband refuses to eat "diet" food and he loved both recipes. Enjoy healthy cooking.

    WOW!!! What an AMAZING husband you have to try and put forth an effort, after 20 years of sharing! This is so cool! I'm just so happy that I'm dancing in my chair! Why don't you try some of SP's menu ideas? Now, if you like lasagna, then here's a recipe that I use, of course I'm gluten free. I also use ground chicken, instead of beef, as to me it has more flavor than beef or ground turkey, and it's cheaper.




    1 lb. ground beef, 96% lean
    1/4 t red pepper flakes
    2 t dried thyme
    1 24-oz jar low-sodium marinara sauce
    15 oz. part-skim ricotta cheese
    1 C shredded Italian five-cheese blend (see note)
    1/4 C egg substitute (or 1 egg white)
    1 T chopped fresh parsley
    6 Lasagna noodles


    1. In a skillet over moderate heat, brown the ground beef and drain any excess fat. Stir in red pepper flakes, thyme, tomato sauce and 1 1/4 C water.
    2. In a mixing bowl, combine the ricotta, shredded cheese blend, egg substitute, and parsley.
    3. Coat the inside of the slow cooker with nonstick cooking spray. Place enough meet sauce in the bottom of the slow cooker to cover the bottom. Top with 2 or 3 noodles, break them up as needed, to cover the meat sauce.
    4. Top the noodle layer with the cheese mixture, add sauce to cover cheese mixture. repeat again with noodles and then add the remainder of the cheese on the noodles and then finish with a top layer of the remaining meat sauce.
    5. Cover and set the slow cooker on low. Cook for 3 1/2 to 4 hours.

    *****Please note that the cooking time should NOT exceed 4 hours. This is not an "all day" slow cooker meal."

    NOTE: If you can't find the Italian five-cheese blend, shredded part-skim mozzarella will work just fine.

    Makes 8 servings: roughly one cup
