Spinach & Mushroom Quinoa- Vegan

Spinach & Mushroom Quinoa

3 garlic cloves
1 lb sliced white mushrooms
2 cups fresh baby spinach
2 cups cook quinoa
1 tbsp freshly chopped parsley (1 1/2 tsp dried)
sea salt & pepper
1 tbsp marsala cooking wine
2 tbsp EVOO

Heat EVOO in large skillet high heat, add mushrooms & garlic- saute 5 min
add parsley, salt/pepper & marsala coking wine, cook add'l 5 min
add spinach and reduce heat to low, cover skillet & let cook 2 min
add cooked quinoa, mix well season again & let cook 5 min more, then serve

I enjoyed this recipe very much and that is why I am blogging it to you, but I would add
more flavor by adding a sliced onion(add at initial stage of saute) and also add an add'l cup of spinach(b/c I love spinach and it wilts during cooking) I just thought to add extra protein maybe a can of black beans, rinsed. I used this as a main dish, but could be used as a side dish too.
