Todays breakfast!

2 large eggs
1/8 cup skim milk
1/2 cup diced green bell pepper
1/2 cup diced onion
1/4 cup Kroger 2% mexican blend cheese
1 squirt of Parkay Spray to keep it from sticking

The most filling breakfast I've had all week! All week long breakfast has been around the 300-500 calorie range. I don't mind a higher calorie breakfast because its my favorite meal of the day. Today I got up and made a scramble and it was my lowest calorie breakfast of the week and the most satisfying. So yeah thought I would share with you guys!

    I had something similar - a bit more cheese and I added a couple of slices of toast but it was "brunch" because I didn"t get my act together to make it until around 11. Oh, and I had a cup of coffee with a splash of skim milk cuz I don't do mornings without coffee, but ya, if you have the time to do it, eggs can be a great choice. You can also do make ahead egg dishes like egg muffins and crustless quiches that you can just toss in the microwave to reheat. Have a look at the Hungry Girl website for ideas. She does AMAZING low cal, healthy breakfasts.

    That sounds like an excellent breakfast and I will try it sometime minus the Mexican blend cheese. I'd love to try the cheese but it is not something that is available here. I would have to add mushrooms. Yummy! emoticon
