Reasons we don't loose weight

I have been doing some reading & It is recommended that you don't over exercise as we release cortisol, a stress hormone & insulin. When we release insulin, the body stores fat.
I read similar a while ago but it was mostly about cortisol. It's recommended to do gentle exercise such as walking & swimming. Long distance at a gentle pace is better than hard out running etc.
Normally every summer I am out on my bike cycling over to the beach & back. It's only 15km, but it's very hilly & hard work. I have done some of the long walks that is suggested, but personally I found it boring. So maybe when I do my bush walks, it's doing it slowly & gently. This summer I have noticed the weight has not been coming off. I have found it incredibly frustrating. Doing my head in about being so over weight
