Last night I got out the knitting needles again, and decided on yet another scarf! I have this chunky brown yarn that I think will make a great scarf, and since I'm trying to use up the yarn I've already bought, I can't really make anything but scarves, since I don't have enough yarn for much else! And it's good practice for the stitches anyway, so I'm OK with making scarves for now.
I was quite ambitious this morning and have 2 recipes going right now! The Brown Sugar and Winter Spice granola is out of the oven and cooling. I just have to break it up, and add the dried cherries (not in the recipe, but I like to have fruit in my granola, so I thought they would be a nice addition), and I have a minestrone started in the crockpot. I'll have to add a few things and cook a little longer, you add the zucchini, swiss chard and pasta 30 minutes before serving, so right now I have onion, broth, tomato sauce, some herbs and the beans cooking. It's from "America's Test Kitchen: Slow Cooker Revolution" cookbook, so I'm sure it will be tasty! We're having a soup potluck at work later this month, so I wanted to try out some recipes to bring to that. I'm hoping this one's a winner!
We got out skiing yesterday, it was a nice day for it, and I had a good ski. Unfortunately I didn't make my step goal for the week, as I needed around 15K yesterday to make up for the lower step days and while I did get over 10K, I wasn't even close to 15! Oh well, next week I'm going to try to get closer to 10K daily and not rely on my higher step days to make up the deficit!
