the pumkpin chili recipe

hi everybody! hope its a great Tuesday for all. a couple people asked me to post this recipe. its from a book titled "racing weight cookbook" by matt fitzgerald and georgie fear. there are 3 books in a set about reaching an ideal weight for endurance sports. its very interesting and a lot of information to get my head around. I saw this recipe and decided to try it as my first foray into this set of ideas.
TWO BEAN PUMPKIN CHILI
1# lean ground beef or turkey (optional)
1 green pepper or poblano pepper, chopped
1 yellow onion, chopped
1 1/2 c. water
1 c. canned pumpkin
1-15 oz. can dark red kidney beans, drained and rinsed
1-15 oz. can black beans, drained and rinsed
2 T. tomato paste
2 tsp. chili powder
1/2 tsp. ground cayenne pepper
1/2 tsp. ground cinnamon
1/2 tsp. salt (or to taste)
brown and drain the meat
Add everything else to the pot and stir to mix. bring to a boil, then cover and reduce heat to low. simmer for 30 minutes, stirring occasionally to monitor thickness. too thick--add a little more water, too thin, remove the pot lid.
since I don't eat meat, I cook up the meat for rob but keep it separate and let him add it to his individual bowl.
haven't made this yet- so can't comment on how it tastes. the nutritional info is as follows:
with meat--408 cal. 10g fat-43 g. carb-14g. fiber-37g protein.
without meat--248 cal, 2g fat, 43 g. carb, 14g. fiber, 15g protein.
