Don't bother to cook small amounts.

I've spent years trying to downsize the amount of food I cooked from 6 people to two. Never seemed to happen. I just can't cook small amounts of food.

Then I had an aha! moment. I could freeze small batches for another day!! So now, I don't stress over cooking large amounts of food.

I create days that I don't have to cook!!

Amazing what a different way of looking at things works out.

    I am still trying to downsize the amount of food I cook now that it is just the two of us. I like it when there is something left that can go into the freezer for those days when I don't feel like cooking. emoticon

    I started freezing 1/2 a casserole a while ago. It is nice to pull a meal from the freezer on busy days. Somethings freeze better than others. But I keep experimenting! Good Luck with your new discovery!
