All those dang potatoes!

So, a few months ago, my SIL, said... "Nichole (my niece) has requested mashed potatoes for her wedding reception, and I know you make really good smashed potatoes, so would you be willing to make them?" ugh. LOL I asked how many people they were expecting... "just" 150. JUST? oye. So.. after MUCH deliberation, I decided that since and ONLY since it's my niece.. I would do it. And ever since then, I've been dreading it. haha. There were so many questions to be answered. Just how many dang potatoes does it take to make smashed potatoed for 150 people? We figured about a half cup per person, figuring some would take more, some less. Mom recruited two very kind neighbors to a "potato peeling party" the day before. So, DH & I arrived late Wed night and Thursday afternoon we had our potato peel party. We had 45 lbs of potatoes and 7 peelers. Honestly, it only took about 20 min with all of us working! It was a huge blessing! So, we put all our peeled potatoes in 2 of the big buckets they have at Home Depot and Lowes. Filled them with water, covered and set them outside. (this is the nice thing about cold weather. The back patio makes a lovely fridge!)
The next morning DH & I chopped all those potatoes and I started cooking and mixing and smashing. Unfortunately, we didn't make it to the church in time for family photos, but really??? haha. Overall, it wasn't as bad as I thought it would be, and the smashed potatoes went over very well. DH LOVES my smashed potatoes, but I had to tell him it probably wouldn't be till Thanksgiving before I made them again. haha.

And in case you're wondering... these smashed potatoes are on NO ONES healthy eating plan. haha.

So, that's what I did this weekend. :) I'm sticking around a few extra days to be with my mom as she undergoes surgery, but looking forward to being home by the end of the week!

    OMG Smashed Potatoes for 150 people!!! I could NEVER do that. I wouldn't even know where to begin! Good for you. I bet they were yummy!

    Sounds like fun, my fiance's favorite food is mashed potatoes and gravy, he could eat them at every meal. lol

    thankfully I've never had to make them for "just" 150, though I sometimes feel like he does. lol

    I have not done tators in that amount since Basic training. Whew!
    BTW, I have a bulk recipe site w/servings listed. Most things you can't just multiply, as some ingredients adjust down in bulk recipes. I also have a bulk frozen mashed tator recipe that I got from a caterer... It actually needs to freeze to come out right. PSst they are absolutely great!

    What a lucky niece you have! I would've thought they would delay family pictures considering what you were doing was for her. I think I would've made them all ahead and just reheated in the oven or crockpot(s). I am lazy that way lol.
