MY FAVORITE OATMEAL MUFFINS

It's that time of year again, hot soup, toasted cheese sandwiches, and oatmeal muffins. I was so blessed recently to buy a toaster oven at a yard sale on the way home from church. It was definitely answered prayer because with my injured shoulder I can't lift the pans out of the oven for baking anymore. Just too much pain and effort. So I got the idea of using a toaster oven and I prayed for one, all the while watching the ads, but nothing was ever the right price, at least not until my ride home from church a few weeks ago when I got a great little oven for only $5.00 ! and it works !!
So I'm going to share my favorite oatmeal muffin recipe with you to celebrate my first muffin baking of the year. If the oven didn't bake these muffins, it would have been a waste, but they came out great so I'm HAPPY and I hope you like them as much as I do!
2 cups plain dry oatmeal
1 cup milk
1 egg beaten
1/2 cup applesauce
approx. 8 packets of Splenda or sweetener of choice
2 oz box (1/4 cup) raisins or other dried fruit or fresh cranberries
1-2 T cinnamon
1 tsp. baking powder
1/8 cup ground flaxseed (optional)Mix together dry ingredients, then add moist ingredients
Yum, Yum, ENJOY
Preheat oven to 350 degrees
Spray muffin pans
Bake for 30-35 minutes, adjust time according to your oven
Makes 6 large or dozen medium size muffins, or about 24 mini muffins
serve hot or room temp.
Serving suggestion: slice open and top with hot applesauce and cinnamon
