Whole30-ing Day 1 (part 2) (Monday)

Survived the rest of the day. emoticon Although I had a thought to do the “night time open the refrig and eat anything” around 10pm, I did not and just drank my green tea. I love my cup of tea at night, hot or cold weather.

I usually drink my coffee black but a couple times during the day I do make what DH and I call “dessert coffee” which is putting cream and sugar in it. This name came about early in our relationship. Anytime we went out to eat, when we ordered dessert (always one to share), I would put cream and sugar in my coffee. This was the only time I would do that so it came known as “dessert coffee”. DH always puts raw sugar and creamer in his so it only applied to mine. At home we have fat free half and half and I will use Splenda for the sugar. I have been in the habit of doing this usually in the afternoon now after having my couple of cups of black coffee at breakfast. So I knew and know this will be hard for me not to have my “dessert coffee” fix in the afternoon.

Word on the street is that full fat canned coconut milk is a good substitute for cream. I thought what the heck and tried it. Okay….yucko. emoticon Two sips (one to try and one to give it a second chance cause I am into second chances) and it went down the drain. I love coconut but not into this. The same with coconut oil and using it to sauté things. Can’t do that either. Give me my olive oil. So sadly my coffee consumption will be down for the next month. Oh well. At least I tried. And cutting down on the coffee probably is a good thing right?

So recap of what I ate yesterday:

2 eggs
Kahlua pig, about 2 oz (recipe from Nom Nom Paleo)
2 small tomatoes

4 oz grilled hamburger
Leftover summer squash and diced tomato casserole (removed the cheese that was on top)

Mexican – Huge green pepper filled with shredded chicken, diced tomatoes, onions, peppers, black olives all mixed with homemade taco seasoning
Smashed avocado with lime juice

½ nectarine (it was disgustingly dry and no taste so ended up throwing it out)

And that was my Day 1. Off to Day 2 emoticon

    I have tried adding the coconut oil to coffee and the taste is OKish but its weird looking at that oil slick on the top of the coffee, not very appealing. I just stick to black with a dash of cinnamon ...sometimes we get flavored new england coffee its good black over ice. DH called the flavored coffee candy bar coffee.

    As for the coconut milk, well I cook with it, but I've never added it straight to something such as coffee. Sounds awful. Sorry you have to give it up, but it's only for 30 days, right?

    I have learned to love coconut oil! If you have a Sams club they have a 54 oz jar for about $15. My favorite use right now is roasting vegetable with it in the oven. Current favorite is green beans with coconut oil and chipotle sea salt- roast until some are "crispy"- so good! I would have def. eaten more veggies growing up if my Mom had roasted instead of steam/boil etc.

    You are doing sooo well on the WHole 30. I would never give up my dairy again. I tried a very low carb, no fat diet not too long ago ( under a specialists care ) And was so crabby and listless that I vowed to stick with what I KNOW works for me. My SF Jan-Marie is on day 30today and she loves this diet and plans to eat it indefinitely. SHe has done so well and is flourishing, so do what works for you. Have another great whole day.

    That absolutely sounds like a do-able menu to me! I am really excited to try this plan. Right now I haven't told my husband lest I get the eye-roll about yet another diet plan! Today at the store I loaded up on wild-caught fish and no-antibiotics-added beef and frozen berries.

    I am SO HAPPY to hear about your experiences with the coconut oil and milk; I picked up a nearly $10 jar of coconut oil at the store but put it back -- like you, I'm happy with olive oil so why bother? Thanks for saving me $10!!
