So hard to get back on track

I did so well the first 7 weeks of this healthy eating. Now i am in the phase of doing well for a couple of days then giving in to temptation. Like a roller coaster, up and down, That is how the scale has been too. loose a half pound then gain. It has been hard to get back into the Habit. That is the key word, i had made habits and then abandonded them. Are they still habits if you can drop them so easily? Can a habit be somthing that we do without thinking or will habits around eating always be so difficult?
I am scared. I do not want the 29 pounds i lost to come back and with friends. Already I have gained some back, not enough for me to see the difference yet but enough to be worried that i will not get the next 80 off.
I reread the habits stage of SP and do not want to move on until I have really mastered and made them a habit. How do we know when a habit is so engrained that even when we go off the path we automatically get back on?
