Day 9. Beet sliders

We made beet sliders last night with beets from the farm. (recipe:
). They were sooooooooo super yummy. We've decided to replace the mayo and sour cream in the dressing with avocado next time to make it a. healthier, b. vegan, and c. even more delicious.

We halved the dressing and still got a full mason jar (2 cups) out of it. We only used about 2 tbsp apiece across 5 sliders each, so we saved the rest to use on salads in the next couple of days. We did also make a delicious egg salad out of it, which is our lunch and dinner today.
