Day 8. Mac N Cheese

We had a box of mac n cheese lying around and decided to make a quick dinner out of it last night. We made some alterations that made it delicious, healthier, and super filling! We've done it in the past with the Kraft stuff, but this time we had a box of Annie's, which is a tad bit healthier to begin with. We added a 1 lb bag of California mixed veggies (broccoli, cauliflower, and carrots) in with the pasta as it cooked, then substituted the milk and butter with 1/2 cup cottage cheese. Mmmmmmmmmmmm.
