Wheat Belly...

So exactly 4 weeks ago I decided to go grain-free. I read a book called Wheat Belly to get me going. It didn't actually start out as a diet or weightloss strategy. It began when I realized that the food I was eating was making me sick. Though I have never been diagnosed, it finally occurred to me that I was frequently nauseated and acquired a headache after meals containing any kind of wheat or gluten. My stomach was always bubbley and in knots. Around Easter time this year, I ate a Lenten dessert common to our local northern NM culture called Panocha, all its made from is water, sprouted wheat flour and sugar (and cooked for HOURS). I hadn't eaten it in about 10 years. Within hours I became extremely bloated with stomach cramps... I avoided anything with wheat or gluten for the next couple days, then intentionally ate Panocha again with the same results... So, as you can see this was just a self diagnosis...

On May 26, I went entirely grain free (to eliminate blood sugar spikes which can be attributed to cravings and food binges). I also gave up sugar, and anything containing sugar (even the small amount found in most peanut butter), I tried to also give up fruit and dairy for the first month, just to break cravings... but I have indulged in small amounts of fruit a couple times a week, and I have allowed myself a small amount of cheese on a few occasions. I didn't feel like I really went through the withdrawal that some people describe since I had cut back on wheat quite a bit since Easter. I had some mild headaches, but nothing compared to the headaches I got from eating the wheat in the first place. I still crave foods I'm not allowed to eat, but its not a physical craving, just a mental or emotional one, which typically passes pretty quickly with a healthy alternative. I have lost 15 lbs in the last 4 weeks, and I feel like a new person. No more nausea, no more headaches, normal bowel habits, less joint pain, and even more radiant skin... benefits I never expected or even thought about. Its amazing... I can't wait to see where this goes in the long run. I'm now a firm believer that wheat free is the way to go...
