Week 1 Review and Wrap Up

I am really getting the hang of this green smoothie thing. Loving the fact that my 11 year old son is also drinking them with me. emoticon emoticon

Today marks the end of Week 1. What did I learn:
1. Collard greens do not make good smoothies- YUCK emoticon
2. I love the creaminess that bananas create in the smoothies emoticon
3. I can make up my own as long as I stick to the basics emoticon

Orange Collard Smoothie- Sorry I will not post this recipe because it was just that nasty. I plan on cooking the collard greens tomorrow for dinner.

Yesterday we made up our own recipe
Peach Almond Smoothie
1 cup baby spinach
1 cup unsweetened almond milk
1 peach
1 frozen banana
Blend spinach with almond milk until smooth. Blend all other fruits
OMG this one was so good but the banana did over power the taste. Next time I use 1/2 banana and use frozen peaches so that it still comes out thick. I will also up the peaches to 1 cup. A whole peach made about 2/3 cup

Today we made another creation. I forgot I had oranges left over from the horror milkshake
Orange Banana
1 cup baby spinach
1 cup water (ran out of almond milk but that is another story)
1 frozen banana
1 orange
This was good but next time I will just use the juice from the oranges. Also they were not that juicy or sweet so that may have impacted the outcome, but it was good.

Starting tomorrow I plan on adding some chai seeds or flax to my smoothies to keep me full longer. Tomorrow I am making a Lemon Blueberry smoothie to finish off our baby spinach. We are going to try some other greens next week, I am thinking kale and arugula will be good choices.

Drinking the smoothies in the morning has also helped me be more mindful of my eating throughout the day. I have been tracking and keeping busy.
