I'm sure we've all heard that we need to eat more veggies. Dealing with food allergies, forever hungry and exhausted, plagued with the the most stubborn body fat, I'm always trying to figure out what I need to 'fix' to help me be the skinny and vibrant me that I used to be. I do remember learning about Scurvy as a kid. A Vitamin C deficiency that the Natives helped the New World settlers to overcome by teaching them how to get the necessary nutrients from pine needles. No, I'm not boiling pine needles! ;) I had more recently been reading (again) about how Vitamin C helps combat Cortisol, the "stress hormone" that is supposed to aid in metabolizing foods, but can contribute to fat storage, plus it suppresses the immune system and also decreases bone formation! I just learned the last two, now, while looking it up!
So, with renewed hope, I have increased my veggie intake. It's been a bit of a bumpy transition, quite literally. Being allergic to even the natural sugars in the veggies, my skin has been suffering not just with pimples, but even nasty boils. I knew that I had to ride this out. Suddenly, my skin is clear, I have higher energy levels and of greatest surprise of all, my gums are healthier! I mean, yes, I remember the lessons on Scurvy, bleeding gums and all, but I didn't realize how this was actually affecting me! People also think that I've lost weight! The weigh scale doesn't agree, but who am I to argue?! Something about me must look better! :) I am almost back down to where I was a couple of years ago, but I still have a long road ahead. I just want to say that I finally feel like I have a chance of winning this battle again, and mostly due to just eating my veggies! :) I know, this shouldn't be a surprise! LOL :D
I am totally editing this post - as I was rereading it, I saw it again. Cortisol suppresses the immune system! Allergies are caused by a suppressed immune system! Vitamin C helps control high levels of Cortisol. I was allergic to foods that contain high levels of Vitamin C! What a vicious cycle to be in and writing and rereading this post, now, just gave me one of those life-changing light bulb moments! Wow!
