The Amazing Race Challenge - Week's Worth of Meals

The Hula Cabana of Azure is visiting the Ninja's this week and doing their “The Amazing Race” week long challenge. One of the challenges is to plan a week's worth of meals, so this is mine. I always put what I am going to eat in my nutrition tracker first thing in the morning. Once I have the basics in, I look to see how I am doing – looking for roughly 40/30/30 carbs, fats, protein; 1500 mg sodium; 30 grams fiber; 1200-1500 calories. I adjust my meals and snacks until I have the right mix.

Wednesday (my free day):
Breakfast – 2 pancakes, 2 T syrup, 1 piece of bacon
Lunch – Green salad, roasted chicken breast
Dinner – 2 tacos, using extra lean beef, sliced tomatoes and cucumber
Snacks - apple, grapes

Thursday:
Breakfast – oatmeal, wheat bran, cinnamon, raw pecans, hard boiled egg
Lunch – eggplant, green salad
Dinner – cod, spinach, tomatoes, cooked in small amount of olive oil, broccoli
Snacks – orange, banana

Friday:
Breakfast – egg white veggie omelet
Lunch – artichoke, roasted chicken
Dinner - cod, spinach, tomatoes, cooked in small amount of olive oil, asparagus,
Snacks – banana, raw nuts

Saturday:
Breakfast – ½ cup cottage cheese with 1T wheat bran, apple, 1T peanut butter
Lunch – eggplant, green salad
Dinner – roasted chicken, cauliflower
Snacks – Dannon Fit & Light Yogurt, orange

Sunday:
Breakfast - oatmeal, wheat bran, cinnamon, raw pecans, hard boiled egg
Lunch – Mixed green salad, tuna with 2T mayonnaise
Dinner – Salmon with small amount olive oil, asparagus
Snacks – apple, yogurt

Monday:
Breakfast - egg white veggie omelet
Lunch – Asian Chicken Cabbage Salad
Dinner – roasted chicken, broccoli and cauliflower, small salad
Snacks – grapes, cherries

Tuesday:
Breakfast - ½ cup cottage cheese with 1T wheat bran, apple, 1T peanut butter
Lunch - Asian Chicken Cabbage Salad
Dinner -Salmon with small amount olive oil, asparagus
Snacks - orange, grapes, cherries

    Your menu for the week looks great.. I like to plan my menu daily, and enter it, like you I sometimes make small adjustments!

    Impressive! I'm working on planning and may give this a try next week because I have a lighter-than-usual work schedule. When I enter everything the evening before, I do much better the next day because I'm much more likely to tell myself, "If it ain't planned, I don't eat it." I do make exceptions, but weigh them much more carefully.
