On the Plan I have been rotating 3 different breakfasts: flax granola, pumpkin pudding and blueberry pear compote. The other day I felt like a change and scrambled some eggs with mushrooms, onion and bellpepper.
It was great and it kept me full till lunchtime. So now I have 4 breakfasts to rotate :)
Anyone who knows me well will tell you that I am a lazy person.. I have to tell you that is mostly true but it takes a lot of organization be able to pull that off :)
I love batch cooking and have plenty of leftovers or freezer meals to pull out and have a meal ready without too much effort - add a salad and it's done!
This Saturday DH went out on the boat - we finally had a day still enough after all the high winds we have had. For me that was the perfect tine to get some time in the kitchen.
I made a pot of broccoli soup and a large tray of roasted italian vegetables.
For fun I timed the prep :) Half an hour!! The stove and the oven did the rest and at the end it took me 10 minutes to get it all portioned out and put away and this is what I ended up with:
9 portions of cream of broccoli soup and 6 portions of roasted veggies.
Another 5 minutes for clean-up and the dishes (I don't have a dishwasher) and then it was time to brew a pot of tea, and curl up with a good book! My freezer is stocked again!
