Batch cooking

Tuesday, May 13, 2014

On the Plan I have been rotating 3 different breakfasts: flax granola, pumpkin pudding and blueberry pear compote. The other day I felt like a change and scrambled some eggs with mushrooms, onion and bellpepper.

It was great and it kept me full till lunchtime. So now I have 4 breakfasts to rotate :)

Anyone who knows me well will tell you that I am a lazy person.. I have to tell you that is mostly true but it takes a lot of organization be able to pull that off :)

I love batch cooking and have plenty of leftovers or freezer meals to pull out and have a meal ready without too much effort - add a salad and it's done!
This Saturday DH went out on the boat - we finally had a day still enough after all the high winds we have had. For me that was the perfect tine to get some time in the kitchen.
I made a pot of broccoli soup and a large tray of roasted italian vegetables.
For fun I timed the prep :) Half an hour!! The stove and the oven did the rest and at the end it took me 10 minutes to get it all portioned out and put away and this is what I ended up with:

9 portions of cream of broccoli soup and 6 portions of roasted veggies.

Another 5 minutes for clean-up and the dishes (I don't have a dishwasher) and then it was time to brew a pot of tea, and curl up with a good book! My freezer is stocked again!

I like to saute spinach and add scrambled eggs to it. Wish I could figure out how to make omelets.

Love it, love it, love it! I'm great at using up leftovers to create mini meals but I never think to deliberately do batch cooking. You've made it look so easy. Your breakfasts sound yummy. Here's another option that's easy and filling. In a blender: fresh spinach and/or mescalin lettuce, fruit (any type, fresh or frozen), ground flax seed, chia seeds, almond or coconut milk. Give it a whirl. emoticon

Looks like a lot of work initially...but the pay-off is less work later. I need to set aside a day, too. My organizational skills are ....let's say...lacking!

Congrats on your great lifestyle. It's no wonder you look so great!

Not lazy, well organised! The key to successful weight management! I tell myself often that I *should* plan in advance and make up meals for the week when I have time over the weekend, but usually end up scrambling around trying to find something quick and easy to make, which inevitably ends up being less than healthy.

Wow! What a great way to do it!

Glad you have another breakfast option to rotate!
I need to find one too!

I am finding with the weather being so up and down, soup is not always the welcome option, but I discovered a chopped salad that I like which I have on those days when it is too hot for soup!
(it is sad when I am considering 20 C as a hot day! LOL) emoticon
