Fish salad

I had some leftover cooked yellowtail (white fish) in my fridge and needed to do something with it. The other night we were at a potluck party and a neighbour brought her famous chicken salad - shredded chicken, mayo and onions and a few other bits and pieces. It was delicious!
It gave me the idea to do something similar with the leftover fish.

I shredded the fish, added chopped red onions, parsley and apple



Then I mixed it all together with a dollop of plain greek yoghurt



Served on a bed of lettuce with half a avocado and a few drops of hot sauce (I like my hot sauce LOL) and that was lunch.



It is a quick and easy recipe and you can use tuna or chicken as well. It is a great base and you can add all sorts to the salad, tomatoes, shredded carrots, cucumber - be creative!!
