37" Waist!

Last night's dinner of turkey meatloaf, rice a roni, red kidney beans, and corn was amazing! I made my own mini meatloaf with 4oz of ground turkey, sautéed yellow onion, green bell pepper, a splash of 2% milk, a small amount of italian bread crumbs, italian seasoning, pepper, and sweet baby ray bbq sauce and a tiny bit of ketchup on top of the loaf. It was so delicious that I will definitely be making it again just like that. I found I didn't need the egg so I omitted it and it held together nicely without it.

Tonight I'm going to make a stir fry over brown rice! Going to do cubed chicken breast, broccoli, cauliflower, onion, bell pepper, celery, garlic, canned whole baby corn, and bok choy and ginger if Grocery Outlet has some. I'm going to use sweet and sour sauce on everyone Else's but for mine I'm just going to use a little pepper and maybe a dash of salt. The sweet and sour sauce is so good but 60 calories for 2 tablespoons seems a bit high. I'll be making brown rice to go with the stir fry to help add some whole grains to the dish.

Went to the gym last night and did 30 minutes on the arc trainer and burned just over 400 calories. Earlier in the day I did 30 minute exercise, 60 minute walk, 1 minute plank, 100 squats, and 200 crunches. My tummy and thighs hurt but it's not too bad :)

The scale still hasn't budge! It's as if the last 1.2 pounds is eluding me. Hopefully soon it will come off :) Not going to worry too much about it since I'm still losing inches. My waist went down to 37" making me only 2" away from the "healthy" measurement of 35".

    Wow congrats on the inches! And your meatloaf sounds delicious! Don't worry about the scale not moving...if you are losing inches it probably means you are still burning fat but gaining muscle. I just realized how much muscle weighs because since I've had my wisdom teeth out and haven't been working out, I've lost about five pounds. I think it's really just muscle that is disappearing though because I'm eating the same amount of calories as usual and not working out at all. Goes to show how much of a difference muscle makes!
