Sunday lunch for 7

Yesterday we hosted a lunch for some of our friends going north. It was fun to spend some time with them over a leisurely meal on the back patio. The wind had died down and it was a lovely calm, sunny and warm day. We needed 2 umbrellas to keep us in the shade!
One of our friends has to eat gluten and dairy free - so my first thought was: Plan food! I did go through my spices and especially the spice mixes to make sure they were ok and had to set a few aside that have "food starch" (whatever that may be) in them.

A big salad to start with:

I made 2 trays of veggies to roast in the oven - red onion, broccoli, butternut squash, mushrooms, zucchini and carrots, tossed in garlic, olive oil and italian herbs

Shrimp marinated in olive oil, lime juice, garlic, salt and red pepper flakes - shrimp are harder to find this time of year and I was lucky to get a kilo (2.2 pound) of the grandes - 21 shrimp to the kilo. I cooked them in the grill pan and then let them rest in the oven.

DH grilled the chicken and steak on the outside grill. The steaks got a little crispy but turned out cooked just right! I let them rest for about 5 minutes and then sliced them.

For afters I cut up melon, pineapple and strawberries and they were served with (or without in case of my dairy free friend) ice cream. It was the first time I had ice cream since before Christmas - oh so good!! There was also a platter of sliced brie with crackers and red grapes - sorry no pics, we were too busy eating at that point LOL

After a week of happy hours, eating out a few times and dinner with friends at someones home twice, I am happy to report that my weight stay below my panic point. I was 138.2 this morning - very acceptable after all that partying!
My wrist is feeling (almost) back to normal, and as we were up early I did a yoga session which used it a lot but luckily there wasn't any discomfort. It felt good to get back with the yoga sessions!

Of course I made way too much food yesterday and there are a lot of leftovers. One tray of veggies would have been plenty and except for the shrimp, which were all gone, there is about half of the steak and chicken left over. We will be eating well this week!
