Morning Vegetable Ideas?

I can easily eating 4 to 6 servings of fruit each day but I need to add more vegetables into my diet. In the past, my family ate fried potatoes, tater tots, or hash browns each morning with their breakfast. I really like sauteed yellow squash to eat at breakfast but this is getting old. Do any of you know of any flavorful and/or fun cooked vegetable ideas for breakfast?

    mmmm....definitely spinach, but I love love love spinach. You can try it scrambled with eggs or even in a smoothie. Today I had veggie soup for breakfast, lol. Also, avacado goes great with eggs. 3 veggies that I think make great purees as sauce for other foods are broccoli, cauliflower, and avacado. Broccoli puree would be really tasty over an omelet. If you pair the avacado with salsa that would be good as well. I like to make the cauliflower with cumin and use it as a dip or sauce. You can also bake an avacado with an egg in the center. I think you could also make some sort of savory oatmeal that has veggies in it.

    Some mornings I make scrambled eggs with 1/2 cup liquid egg whites, 1 egg and add baby kale, spinach and/or mushrooms. Red pepper is great too. emoticon emoticon
