Irish beef stew

emoticon My task this week was to make Irish cuisine emoticon
I choose this recipe after seeing a review from a fellow CoH emoticon
Here is the recipe:
1-1/2 lb boneless beef round steak, trimmed, cut into bite-size pieces
2 T flour
2 T oil
1 lg onion, coarsely chopped
1 can (14.5 oz) beef broth
1 can (14.5 oz) stewed tomatoes, undrained
1 envelope (0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix
1 lb red potatoes (about 3) cut in 3/4 inch chunks
3 carrots, cut into 1/2 inch thick slices
4 c hot cooked noodles
Directions
Coat meat w/flour. Heat oil in Dutch oven or lg deep skillet on med-high heat. Add meat & onions; cook & stir 5-8 min, or till meat is browned. Stir in broth, tomatoes & dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min, stirring occasionally.
Add potatoes & carrots; simmer, covered, 45 min or till meat is tender & sauce is thickened, uncovering after 30 min & stirring occasionally.
Serve over hot noodles.

Here is how I modified the ingredients:
1-1/2 lb boneless stew meat
2 T flour
2 T coconut oil
1 lg onion, coarsely chopped
24 ounces beef broth
2 cans (14.5 oz) stewed tomatoes, undrained
1 envelope (0.8 oz.) GOOD SEASONS Balsamic Dressing Mix
1 lb red potatoes (about 4) cut in 3/4 inch chunks
4 carrots, cut into 1/2 inch thick slices
4 c hot cooked egg noodles-I put 2 bouillon cubes in my noodle water
