Still sticking with it, now starting my fourth week of Phase 2. I gained back 2 pounds after starting Phase 2, but this last week it dropped off and took a friend or two with it! I am still feeling much better than before. I eat often enough that I'm rarely hungry. Sugar free jello is still one of my best friends, as is Healthy Choice Premium Fudge bars ( a yummy 80 calories!) I never thought I could eat as few carbs as I do now, but it's not hard - maybe because things still seem like treats after Phase 1!
Today I was out shopping after my morning snack, and missed lunch. I finally bought a piece of cheese pizza, and although I ate most of it, I really didn't enjoy it - too salty! This was my first shopping foray in a long time. I purged my closet yesterday, and got to buy things in a size 14 - shopping in regular sections for the first time in a long, long, time! Not everything in that size fit, but I found several things, so I was happy. Just to make sure, I tried on a few 16s and yep, they were too big. Yay!
Tomorrow is St. Paddy's day. I found a recipe for low-salt "corned" beef brisket, which I plan to adapt for the crockpot. Have no idea how it will turn out - and I am enjoying experimenting with food after years of buying premade quick meals.
