Cauliflower Pizza

Happy Tuesday everyone!
Tonight for dinner I decided to try something new! I made cauliflower pizza! & it was actually pretty amazing. I put 1/2 head of cauliflower in the food processor then once that was done chopping up I added one egg and some seasoning(little garlic, oregano, and Italian seasoning) then about 1/2 cup of mozzarella cheese. Once it was all mixed up I just put it on a pizza pan and shaped it into a circle then popped it in the oven at 450 degrees for 15 minutes. After the crust is golden brown then you can add you desired topping! BTW, I tried meatless pepperoni because it was few calories IT WAS HORRIBLE! I cant even describe what it taste like. ICKY!!! But other than the meatless pepperoni it turned out great I will definitely be making it again.

Other than making the cauliflower pizza not much has went on today! I had class in the morning then ran to the store to pick up my ingredients. I decided today will be my rest day from the gym because I had class till 12:15 and have to work at 5 and I wanted to come home and relax for a little bit before work.

Tomorrow is my first weigh in. I will more than likely post short blog about it in the morning.

Heres what I ate today!
-breakfast essential drink

-apple with peanut butter
-can of tuna

-cauliflower pizza
-sautéed some mushrooms.

-nothing yet but I probably will take something small to work incase I get a little hungry

-Only water

Ive only been back on my diet for 4 days and I feel great! Hopefully the scale will be in my favor tomorrow. I am going to start taking measurements of my body and see how that goes.

    I LOVE cauliflower pizza. I have always cooked the cauliflower first. I like your idea of just mixing and cooking. Did the crust stay together or was it pretty crumbly. Great job on 4 days back on track!! Keep pushing!
