Good karma and a new to me freezer!

The past two years, I have wanted a chest freezer. This year was my year to buy the chest freezer. Coincidentally, one of my friends at work is getting rid of her chest freezer, no room for it, does not want it. Free – just have to go pick it up. This is exciting! I felt like I won a little mini lottery in life here.

My plan for the new freezer is to do big batch healthy cooking and I can’t wait. I think this will really help for eating healthy between the kids’ dance, four baseball teams and other busyness. The other person who is very excited about the freezer is my dad. My stepmother and dad live in a retirement community and love to cook. However, when they downsized from a house to a 2 bedroom condo, they were not able to stockpile food as effectively. He is almost excited as I am. “What if I see a big sale on meat? Will you let me store some food in your freezer?” I told him I would reserve a special place in the freezer just for him. :)

I have been talking to some of my friends about doing a cooking swap instead of a cookie swap, I thought it would be a good way to eat healthier, socialize, and try new recipes because I tend to get in recipe ruts.

Now I can think of a new gift idea for Mother’s Day and my birthday. Big decision here, I think it might be between a rain barrel or a new pair of running shoes!

    Awesome!! What are your favorite batch cooking meals? I want to come up with a few to rotate to eat for lunch... Right now all I've got is white bean chicken chili. I'd love to hear your go-to's!
