Kristen Cooks!

If you followed my blog at all before I took my hiatus you know that I'm not the biggest cook. I have been getting MUCH better about it now. Since I'm home all day and Noah works quite late I've been trying to cook dinner for us. I have always been the first one to call "uncle" and order takeout. Not anymore! The truth is I much prefer home cooked meals anyway. Here's what's been on the menu this week:
Sunday: Roast beef sandwiches, oven fries, and salad (Noah cooked this delicious meal)
Monday: Spaghetti and (homemade) meatballs with garlic bread
Tuesday: Stir fried veggies and shrimp over rice
Wednesday: Stuffed salmon with cous cous and brussels sprouts
Thursday: Mushroom risotto with spring mixed salad
now, I know that not everything is super healthy - but I'm working on it!
triumph from yesterday: only went over by 10 calories. I know it's over - but lets just say I was going WAY over until yesterday. I've been tracking a lot better recently.
today I have done nothing but snuggle the baby and watch tv. I keep telling myself I'm going to get up and do something productive and then I get sucked into an SVU marathon. UGH. Next week I SWEAR I will be more productive and move more.
tomorrow I'm having my first grown up outing without the baby or Noah. it's a bachelorette for one of my best friends. I'm excited! and the good news is that I'm a super cheat date after so much time not drinking :) I also think Noah's excited to be spending solo time with his baby boy.
I wish it was spring already. this winter is pounding the east coast and killing my chances of getting out and moving with the baby boy. we've been out for walks every day it's been above 40 but that hasn't been many. I can't wait to go for walks with him and get out! wishful thinking.
how're you all doing this beautiful Friday?
