Easy Creamy Avocado and pasta dish

Creamy Avocado and Pasta Entree
1 portion cooked Cellantani pasta
1 Firm ripe avocado
1 Cup frozen mixed veggies cooked (optional)
Olive oil (to taste)
1 tsp Garlic powder

I like coming home from an afternoon out and having go-to dinner ingredients just waiting to be assembled. I think you'll like this dish because the avocado gets so creamy when its heated and tossed with the pasta.
This one is Avocado and Cellantani with olive oil dressing and grated Parmesan. I make the pasta ahead, enough for several meals, moisten with olive oil, sprinkle garlic powder and toss. Refrigerate until needed.
At dinner time, cut up a ripe firm avocado and toss with portion of
the pasta, (sometimes I add about a cup of cooked frozen mixed veggies to up the veggie
count for the day) , drizzle additional olive oil, and toss.
Microwave until heated through. Sprinkle with parmesan cheese and enjoy.
Serves as a filling food with lots of volume, a meatless entrée, and a comfort food. Enjoy!

    Sounds really wonderful. I love avocado and will eat it almost any way, including in a veggie sandwich. A lot of people don't realize you can cook pasta ahead. I've frozen it, too, and it thaws beautifully and quickly. Good planning on your part! emoticon

    I make something like it olive oil olives sliced 1/2 cup 1 clove Minced garlic 1 chopped up tomato pepper Heat up put pasta in Can add grated cheese if wish I sometimes add Parmesan
